I finally harvested the chillies off my potted Jalapeno plant on the weekend. I got about 40 of them, mostly bright red, but some green. There are about 20 left on the bush. What was I going to do with a pile of Jalapenos - make some sweet chilli sauce of course !
So, I had 250 grams of chillies, and this is what I did:
Sliced them up and put them in a saucer with 4 crushed cloves of garlic, 2 cups of water, 1 cup of caster sugar, 1 tablesoon of salt and 1 tablespoon of white vinegar.
Bring it all to the boil and simmer until most of the liquid has evaporated which took me about 45 mins.
All you need to do is chop this mixture up in a blender and there it is. Its that simple.
Tonight I had some on the chicken schnitzel and it is heaps better than the bought stuff. Its not even that hot. My wife tried it and loved it, and she'd never eat the Jalapenos raw likie I do.
All in all, a satisfying way to consume most of th crop. Will definately make some more next year.
